Quick Fruit Cake
If you and your family love fruit cake but find that the shop bought ones are too expensive, or making one at home is just too much bother with all the fruit and ingredients, then here is a really easy fruit cake recipe for you to try.
You will need:
8oz (225g) of Self Raising Flour
3 Eggs
5oz (150g) Sugar
5oz (150g) Margarine or soft butter
1lb (450g) Jar of Sweet Mincemeat
3oz (75g) Sultanas
Pre-heat the oven to 160C, 325F, Gas Mark 3 and grease and line a deep cake tin. Then simply place all the above ingredients in a large bowl and mix thoroughly until completely blended. Spoon the mixture into the cake tin and level off before placing into the oven. Bake at the correct temperature for approximately 1 hour 30 minutes. When the cake is cooked a knife inserted into the mixture should come out clear. Allow to cool slightly and turn out onto a cooling tray or rack to cool completely.
This is a delicious recipe that doesn’t cost anywhere near the amount of a traditional fruit cake, is easy to prepare and a winner with my family.
Easy Banana Loaf
This is a moist cake that will keep for a few days in an airtight container if you wish.
You will need:
1.3 lb (525g) Ripe Bananas
6oz (175g) Brown Sugar
40z (100g) Sultanas
2 Eggs
8oz (225g) Self Raising Flour
Grease and line a 2lb (900g) Loaf Tin and pre-heat the oven to 190C, 375F, Gas Mark 5. Mash the bananas in a bowl and add the sugar, sultanas and eggs. Stir well then add the flour and continue to mix thoroughly. Place the mixture into the loaf tin and bake in the oven for 1 hour 15 minutes until cooked. For best flavor this cake is best kept for 24 hours before serving but it really is worth the wait.
